Married to a Vegan

Thanks for joining me!

My name is Jackie and I’m married to a vegan. (That kind of sounded like I was admitting to an addiction)

I should mention before we get any more serious, that I’m not a vegan. But I truly enjoy cooking and creating meals that both a vegan and non-vegan can enjoy.

Over the last four years since my husband went vegan, I’ve had to relearn how to cook in a sense. Sure, I can make him vegetables all day, but where’s the fun in that? I believe that the effort and care we put into our cooking for others to enjoy speaks volumes. It’s a simple kind of way to show someone you love them. Baking them a cake or making their favorite dish lets your loved ones know you’re thinking of them.

I want my husband to feel like he’s not missing out on anything (and he doesn’t). But, I still want to be able to create recipes that mimic his old favorite, pre-veganism foods.

I get asked pretty often about my recipes I create, so I wanted to make a blog where I can share my flops and my successes…but mostly my successes.

I hope this blog helps others who are transitioning into veganism or are married to a vegan, or just want to eat less animal products.

Hi there and thanks for joining me! My name is Jackie Torrecillas. I recently graduated from California State University, Stanislaus with my BA in Geography and a minor in Geology. I love being outside and exploring the world! Aside from being a Geographer, I consider myself a self-proclaimed geologist, chef, foodie, fashionista, and outdoorswoman. I've been married to my best friend Daniel for the last four years. He is my partner in crime and the greatest blessing in my life. In August of 2020, we made the move to Dallas, Texas from the Central Valley of California in order for me to pursue my graduate studies at the University of North Texas. A move halfway across the country is a scary one, but it sure helps when you have someone to share the journey with. The purpose of this blog is to share and document the ways I am navigating my new life in a city and my time in graduate school...amongst other things.
